1 cup butter, softened (2 sticks of creamy butter softened but not melted)
4 cups of powdered sugar
1 tablespoons vanilla extract
1 tablespoon coconut extract
Pinch of sea salt
1 - 2 tablespoons (or more) light coconut milk
* Fresh raspberries optional (topping only)
This recipe covers approximately 24 cupcakes or a 9 x 13" cake. It is a must to taste-test this and if it is too dense (think) add more coconut milk. Start with 1 tablespoon coconut milk and add if you need to after you mix all the ingredients. Easiest if you have a food processor but I blend with a hand mixer and as long as the butter is softened and not fully melted it comes out great. Remember to whip ingredients to increase fluffiness. Again, if it comes out heavy or too thick, add another tablespoon of the coconut milk and keep doing that until you are happy with the results.
* Raspberries balance out anything that is too sweet. If you have a chocolate-heavy dessert, raspberries will add tartness to ensure the chocolate is not too heavy. Raspberries add a similar experience with a sweet buttercream frosting and just a sliver
This is a sweet recipe as most frostings are but it also comes out beautifully with a strong coconut flavoring that blends nicely on trail mix bars, cupcakes, and cakes. Add shredded coconut on top and it provides an unexpected twist! Keep the ingredients on hand along with a box of cake mix. If you are in a pinch to provide a quick dessert, bake the cake as instructed on the box, make your coconut buttercream frosting, keep a small portion of the cake to the side and create cake balls. lightly frost and sprinkle the coconut flakes and you have a beautiful patisserie-style dessert (see photo above).
